The anatabloc is still a God send. Sugar and refined flour is my evil, so I have to use whole grains and little sugar day to day. I have noticed I can "cheat" more with anatabloc-but it's a slippery slope I don't want to go down. Plus, eating healthier is good all around common sense, anyway! It's just not always convenient-thus the puff pastry approach above. You can certainly make your own crust for this with whole grains or gluten free. I just was short on time. And our previous tomato tart attempt where I made a home made crust was not very good! I did not want to put extra effort this time until I nailed my fillings.
