Aldi is my favorite store these days and my newest obsession. They have crazy prices, and some really nice gluten-free products, and organic products. I decided to try the Live G Free Baking Mix to make some muffins. They turned out fantastic. I am going to play a little more with this great baking mix, and you should too! It is a very versatile mix, and tasty for a gluten-free option.
 
‘Live G Free’ Very Berry Muffins
 
Ingredients:
 
1 Box G Free Baking Mix
 
Fruit:
1 cup finely chopped strawberries
1 cup blueberries
juice of 1/2 a lemon
a healthy splash of grenadine
2 Tbsp. sugar
1 tsp vanilla extract
dash of salt
Batter:
1/4 cup melted butter
1 egg
1/2 cup toasted coconut and vanilla greek yogurt (I get this at Aldi with the baking mix-vanilla works too)
1/4 cup sugar
1 cup milk or almond milk
berry, vanilla or honey flavored granola for topping
Directions:
 
Preheat oven to 350˚.
 
In a large bowl, whisk the egg with the sugar until thickened. Add the yogurt and whisk. Then add the melted butter and whisk. Add the baking mix, then add the milk, then whisk. The batter will be thick.
 
Add the berries with all their juices, and fold in until evenly distributed. Spray a large muffin tin with nonstick cooking spray. Spoon batter in each mold until 2/3rds full. Sprinkle granola on top, and bake for about 30-35 minutes, rotating the pan once. Let cool in the pan for about 10 minutes, then invert onto a cooling rack to cool completely. Makes about 10 large muffins.
