RECIPE: Weeknight Onion Dip

As I mentioned in a previous post, I have been trying to get creative with a GINORMOUS CostCo size bag of chips my husband bought! I swear it is bottomless. (note to self, husband should not shop club store alone again, remember bean salad jar the size of a watermelon brought home from last CostCo trip?) Of course, my daughter is happy we are having chips even with dinner…usually something I only put out for guests and special occasions. I kind of feel the same about dip. When I was young, my mother only put out dip when guests were over. It usually meant fun with cousins, a chance to stay up late and to drink the holy grail of treats…soda! This dip I came up with tasted like french onion dip from the store, and it is a great way to get rid of left over cream cheese you have sitting in the fridge. I takes minutes, and you can serve it with chips and cut up veggies. It can be stored for a day, so you can make it ahead for a party. But I call it weeknight because it is so easy, you can dress up a meal any night of the week with this. For instance, we had it with chips and burgers on a Monday! Sadly, however, it still does not look like we made a dent in that bag of chips yet. OIY!

Weeknight Onion Dip
Serves 4 (double for a dinner party)

Ingredients:

3 oz. cream cheese, softened
1 Tbsp. light mayo
1/2 Tbsp. cream or whole milk
1/8 tsp. salt
1 Tbsp. red onion, minced
1/2 Tbsp. olive oil
1/4 tsp. granulated garlic
1 tsp. dried parsley
1/2 tsp. Worcestershire

Directions:


In a small pan, heat the olive oil over medium heat. Cook the onions. As they start to soften, add the granulated garlic. Continue cooking until onion is brown and beginning to caramelize. Take off heat.


In a small bowl, mix well the cream cheese, mayo, cream and salt until combined and smooth. Add the onions, parsley and Worcestershire. Mix well until smooth. Serve with chips or cut up veggies.
