RECIPE: Fast and Easy Kids Luncheon Pizza

It’s Saturday, your kids are hungry and you have very little in your fridge. And what do the kids want? PIZZA! One Saturday, this was my situation. And I have to say I am happy with what I whipped up-and more importantly-so was my daughter! We keep a bottle of squeezable pizza sauce which is helpful, and always a variety of cheeses that can be handy. Even string cheese can be a great cheese for a fast pizza.

Kids Fast Luncheon Pizza

Ingredients:

4 Tbsp or so of pizza sauce
2 string cheeses or 4 Tbsp. shredded or chopped Mozzarella
1 Tbsp. grated Parmesan cheese
2 Tbsp. Olive oil
1 Pita bread, 2 sandwich thins, a slice of artisan bread or 1 English muffin-split open

Instructions:

Preheat oven or toaster oven to 450˚. On a foil covered baking sheet, place your bread. If using sandwich thins, drizzle 1/2 Tbsp. olive oil in between the sliced opening, then close. Drizzle the rest of the oil on top. If using a large pita, drizzle all the oil all over the top. Spread the tomato sauce over it so it evenly coats the bread. Sprinkle the mozzarella cheese. I had string cheese available, so I ripped it into strips and laid it over the sauce. Use whatever Italian cheese you have that melts–fresh mozzarella can be cut up into chunks and laid on top. Extra Fontina would work well, too. Next, sprinkle the Parmesan cheese evenly. Drizzle a little more olive oil over all of it and bake for 5 minutes. Turn the sheet around and bake for another 3-5 minutes-or until the cheese is hot, slightly golden and bubbly. Let cool a few minutes then cut up for your hungry brood! They will be singing your praises!
