SO who says cheesecake is off-limits for healthy eaters?
Thanks to Jello’s magic flavor elves,  you can make a low fat, easy cheesecake for when you have that sweet tooth. Jello sugar-free cheesecake pudding is sometimes hard to find, but when you do find it, buy a few boxes to keep in the pantry. I also use vanilla flavored Greek yogurt to give the cake a smoother flavor, but in case there is a bit of sugar in there, you can also use plain fat-free Greek yogurt.
Hubby, who hates “healthy things” and prefers real food with real sugar and REAL FAT could not stop eating this cake. I had to tell him after his second helping that it was low in sugar and fat. He was shocked, as he shoved another forkful of deliciousness into his mouth.
Mamma wins again!

Healthy Berry Marbled Yogurt Cheesecake


Ingredients:

32 ounces of fat-free sugar-free vanilla Greek yogurt 
2 tablespoons sugar substitute of our choice
1 package of sugar-free cheesecake flavored instant pudding 
3 eggs 
1 teaspoon of vanilla 
a dash of salt 
1/3 -1/4 of a cup spreadable fruit or fruit purée or sugar-free/low sugar jam

Directions:

Preheat oven to 350˚. 

Mix the Greek yogurt with the sugar substitute, the eggs, the vanilla, the salt and then finally the cheesecake pudding with a hand mixer until well blended.

Spray a springform pan with non-stick cooking spray, and then pour batter into the pan. Dollop the jam on top of the batter in areas, then with a bamboo skewer or butter knife, marble the jam into the batter. Tap the sides a couple times. Bake for about an hour. Run a knife around the edges to loosen the cake after it’s been cooling for about 15 minutes, then unclip the sides and cool the cake, then keep in the refrigerator until serving time. Serve chilled with low-fat Cool Whip.
