This is my husband’s favorite thing I make, and he always asks for it when I make him his birthday brunch. You can pretty much pick and choose your favorite fruit. I change the fruit depending on what is in season or looks ripe and fresh at the store. The thing that makes this salad is the syrup. The haunting essence of ginger with the tart taste of lime is amazing with all the fresh fruit. The more floral your honey-the better! Especially if you get your hand on a star fruit. Starfruit is so floral and unique, it pairs well with floral honey.
I love serving this with vanilla yogurt and granola. The salad keeps for a day or two, so we like it as dessert during lunches, or dollop it on top of ice cream for dessert. As the fruit sits in the fridge, it will break down and get really syrupy, making it really great for dessert or pancake topping. SO get creative with it!
Lime and Ginger Fruit Salad
Fruit:
1-pint blueberries, rinsed and picked through
1/2 cup water
1/2 cup honey
2 Tbsp. sugar
1 2″ slice of peeled ginger root, thinly sliced
pared peel and juice of 2 limes
dash of salt
