So far, SO good..staying on track and focused on my New Year resolution of healthy eating. As I mentioned in my last post, I’ll be sharing some healthy goodies throughout the next couple of months. Don’t worry, I’ll have some full-fat fun as well as my typical craft projects and other goings-on from the urban homestead. It won’t all be healthy. But I will say this, I am really trying to make healthy..well….how should I put it…..not suck. My foodie-family is doing this by default, and I love it when my hubby asks incredulously, “This is healthy for me?” Then I know I am on to something good.
Well, these babies fit the bill. You know after you eat dinner, and you want to nibble on something good as you binge-watch Amazon prime shows for the night? That’s when I get into trouble. So I spent time last weekend making and storing desserts for just that emergency, and these were one of them. These bites pack a lot of flavor and sweetness in one bite, so you don’t need more than one. One will take care of your craving. I am telling you this because you will want to eat more, they are THAT GOOD. But 3 pts. for a modest dessert is plenty, and the salty-creamy-sweetness in one bite should take care of your craving perfectly!
These make about 30 balls, give or take. I store them in a zip-top bag in the freezer and pull one out when the need hits and I have 3 points left in my day. Give them a try.
Weight Watcher Friendly, Frozen Sea Salt Chocolate Peanut Butter Bites, 2 pts each
makes 30 “bites”

Ingredients:
1 cup powdered sugar
1/2 cup creamy peanut butter
3 Tbsp. smart balance margarine
1/4 tsp. salt
1/2 tsp. vanilla extract
Baker’s Dipping Chocolate, 7 oz. tub
sea salt for sprinkling

Directions:

Combine peanut butter, margarine, salt, sugar, and vanilla in a food processor and process until well combined.

Shape into 1″ balls and set on parchment paper. You should have about 30, if not a few more. Let them sit out to dry out a touch and set, roughly about 30 minutes, at room temperature. Meanwhile, melt the chocolate according to package instructions.

Dip each bite into the melted chocolate and cover all sides, tapping off excess chocolate, and place bite back on parchment to cool. continue with all the bites. While chocolate is still wet, sprinkle sea salt on top of each. Place sheet of bites in the freezer to set for a few hours then and store bites in a zip-top bag for up to 6 months.
