These cookies come together quickly and are low fat and healthy. If you can afford a couple of extra points, adding some chocolate chips would make these extra yummy! These have been a blessing during my busy mornings for keeping me on track for my New Year resolution easily. And I am not a fan of bananas. But I like these!
Weight Watcher Friendly Oatmeal Breakfast Cookie
1 smart point per cookie
Ingredients:
2 cups of old-fashioned oats
2 ripe bananas, mashed
1 tablespoon of sugar substitutes, like Splenda or Monkfruit Sweetener
1 teaspoon of vanilla extract
1/2 teaspoon of cinnamon
1/4 teaspoon of salt
1 egg
chocolate chips (optional, and they will add points)
Directions:
Mix together all the ingredients, and let the mix sit for five minutes to let the oats soften up and soak up.
Line the baking sheet with parchment paper. Preheat oven to 350˚.
Spoon the batter with a tablespoon and drop by the tablespoons and bake for about 12 minutes until golden brown on the edges.
Let cool on the baking sheets. Freeze to store, then heat throughout the week as you go!
