Summer is here! And we have had a lot of fun entertaining friends for summer get togethers. Last weekend, I wanted to make some fun baked cookies with a summer theme for a BBQ luncheon. I had seen a lot of watermelon slice cookies online, but as I dug deeper they all were still a simple butter cookie with food coloring. I wondered if there was a way to bake in some watermelon flavor, and maybe even a hint of lime. For that, I looked to using jello gelatin, which packs a punch when it comes to flavor and color. It worked out great. The batter was easy, and as long as you chill it a bit before shaping and forming, then freezing the assembled ‘log’ before slicing, the cookies are pretty easy.

Watermelon and Lime Flavored Watermelon Cookies (includes how-to video)
Ingredients Needed:
3 1/2 cups flour
1/2 tsp. baking powder
1 1/2 cups softened butter
1 cup sugar
1 egg
1 tsp. vanilla extract
1 package of watermelon flavored jello (actually you will need 4 Tbsp.)
1 package of lime jello (actually you will need 1 1/2 Tbsp.)
