Sometimes, you want a bit of cake after dinner with a small cup of coffee as you sit on your deck and think about life.
But cake is not always good for you.
Enter this lovely snack cake which was something I saw in the Weight Watchers repertoire, and I thought I could play with it a little bit to give it more leavening and taste appeal. Of course, this did add calories and points to it. But at the end of the day, it still is pretty healthy in the grand scheme of cakes in general. You can make it a touch healthier by cutting the flour with some whole grains to the batter-like pulsed oats or whole wheat flour. You can also use fat-free instead of light sour cream to cut calories even more.
This cake turned out wonderfully and helped make my ‘pondering of life’ while sitting on my deck that much sweeter.
Low-Fat Applesauce Spice Cake
adapted from Weight Watchers
Ingredients:
1 1/2 cups flour
3/4 cup light brown sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. nutmeg
1/2 tsp. salt
3/4 cup light sour cream
2 Tbsp. canola oil
1 egg
1 tsp. vanilla extract
1 cup unsweetened applesauce
1/4 cup finely chopped pecans
Directions:
Spray a round 9″ baking pan with non-stick cooking spray. Set aside. Preheat oven to 350˚.
In a medium bowl mix the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
In a larger bowl, whisk the sour cream and oil until well blended. Next, add the egg and whisk well until creamy. Next, whisk in the sugar until thick, then the applesauce and the vanilla extract.
Gently whisk in the dry ingredients until just combined. Then gently stir in the pecans.
Pour the batter into the pan, then bake for about 40 minutes or so. You are looking for a light golden color and the top springs back to the touch. Let cake cool in an for about 7 minutes, then run a knife around the sides and transfer to a cooling rack to cool completely.
